Curry Butternut Squash Wedges

This is a recipe I tried out a few days ago after seeing Gemma of Gemsmaquillage have them in her #AwesomeAugust Vlog. I had never tried butternut squash before and it was super cheap in Aldi so I thought they would be worth a try. All I did was chop up the butternut squash into chunks and coat in salt, pepper, curry powder and rapeseed oil. I then baked them in the oven for about 20 minutes and they were super tasty. I even had enough left over for my lunch the next day when they were even better as the curry had soaked in more.


I even found them to be almost as tasty as potato wedges but much better for you in the long run I imagine.
