My weekends as of late have been far from exciting. September seemed to go by in a flash but I have nothing to show for it. On the other hand though it was nice to have the break from the jam-packed weekends the summer brought me and just do something simple. In July I decided to start working through some of the Pinterest recipes and it had been a while since I took up the challenge. I went for the most gluttonous recipe I could find on my recipes board; The Nigella Nutella Cheesecake

I’m not going to type out the recipe here as seems a bit redundant when its not my own recipe and you can find the original here and I am FAR from a chef but I will talk through my experience in making it that you might find useful if you decide to create this glorious dessert yourself (I really recommend you do!)

Cheesecakes are actually pretty simple I found out, that is once I found out the cream cheese and soft cheese and one and the same. That took some googling in Tescos but I eventually worked it out. Other than that all the ingredients were pretty easy to find and didn’t rack up too big of a total. I was lucky enough that the previous weekend I picked up a springboard baking in a pound shop for €2.50! The recipe itself was pretty simple to follow but I did run into a few problems when it came to mixing up the base. It doesn’t say about crushing the digestive biscuits before mixing them with the other ingredients but if you have a small mixer like mine you will run into trouble. The next time I make this, and there will definitely be a next time I will place the digestives in a plastic bag and beat with a rolling pin until crumbles, as it would make life easier.

By far this is one of the best Pinterest recipes I have tried and I can’t wait to make it again. The best part is there is no baking involved at all. Just set it in the fridge over night and it is perfect.  Not the healthiest of desserts but coming into the Autumn months it is nice to treat yourself and others around you with something a bit more devilish.
